Lamb burgers

Easy to prepare and very tasty. Make extras and freeze them for a really quick dinner next time.

Serves 4

Ingredients

bullet1lb 2oz (550g) lean lamb mince
bullet1oz (25g) white breadcrumbs
bullet2 tablespoons fresh lemon juice
bullet½ teaspoon salt
bullet½ teaspoon freshly ground black pepper
bullet½ teaspoon freshly grated nutmeg
bullet2 tablespoons fresh chives, finely chopped
bullet1 tablespoon chervil or parsley, finely chopped
bullet1 teaspoon thyme, finely chopped
bullet1oz (25g) butter, softened
bullet2 tablespoons olive oil
bullet4oz (115g) stilton, or other firm blue cheese

Method

Preheat the grill to high. Mix the lamb, breadcrumbs, lemon juice, salt pepper and nutmeg. Fry half a teaspoon in a pan; taste and season if necessary (remember the cheese is salty). Mix the herbs and butter.

Divide the lamb mixture into eight, then roll each piece into a ball and make a hole with your finger. Press some herb butter into each hole. Cover it over completely, then flatten the balls into burgers.

brush with oil and grill for 5 minutes on each side until well browned and cooked through. Put a slice of blue cheese on top of each burger and grill until it melts. Serve with a tomato and onion salad.
